In a large mixing bowl, thoroughly blend shredded chicken, softened cream cheese, diced sausage if using, green onions, cheddar cheese, hot sauce, and Cajun seasoning until evenly distributed.

Place one egg roll wrapper on a clean surface positioned as a diamond. Add roughly 2 tablespoons of the chicken mixture near the bottom corner. Fold the lower corner over the filling, tuck in the sides, and roll tightly toward the opposite point, brushing the edge with beaten egg to seal.

Pour approximately 2 inches of vegetable oil into a deep skillet or fryer and heat to 350°F.

Carefully place egg rolls into the hot oil in batches and fry for 3 to 4 minutes, turning as needed, until golden brown and crisp. Remove with a slotted spoon and set on paper towels to drain excess oil.
