Voodoo Egg Rolls Chicken (Print View)

# What You'll Need:

01 - 2 cups cooked chicken, shredded
02 - 4 ounces cream cheese, softened
03 - 1/2 cup cooked andouille sausage or chorizo, diced
04 - 1/4 cup green onions, finely chopped
05 - 1/2 cup cheddar cheese, shredded
06 - 2 to 3 tablespoons hot sauce
07 - 1 teaspoon Cajun seasoning

→ Assembly

08 - 1 package egg roll wrappers (about 12 wrappers)
09 - 1 egg, beaten

→ Frying

10 - Vegetable oil, for frying

# Directions:

01 - In a large mixing bowl, thoroughly blend shredded chicken, softened cream cheese, diced sausage if using, green onions, cheddar cheese, hot sauce, and Cajun seasoning until evenly distributed.
02 - Place one egg roll wrapper on a clean surface positioned as a diamond. Add roughly 2 tablespoons of the chicken mixture near the bottom corner. Fold the lower corner over the filling, tuck in the sides, and roll tightly toward the opposite point, brushing the edge with beaten egg to seal.
03 - Pour approximately 2 inches of vegetable oil into a deep skillet or fryer and heat to 350°F.
04 - Carefully place egg rolls into the hot oil in batches and fry for 3 to 4 minutes, turning as needed, until golden brown and crisp. Remove with a slotted spoon and set on paper towels to drain excess oil.
05 - Serve egg rolls hot with ranch dressing, blue cheese dip, or remoulade sauce for dipping.
