Tasty Sweet Chili Pineapple Sauce (Print Version)

# Ingredients:

→ Sauce Base

01 - 1 and a half cups of sugar, preferably white
02 - 1 cup of freshly squeezed pineapple juice
03 - Half a cup of rice vinegar or swap with apple cider vinegar
04 - 1 tablespoon of garlic, finely minced

→ Seasonings & Thickener

05 - 1 teaspoon of salt (adjust it to your liking)
06 - One to two tablespoons of red chili flakes made from about 2 small bird's-eye chilies
07 - 2 tablespoons of cornstarch mixed with 4 tablespoons of cold water
08 - 1 tablespoon of optional tomato ketchup, if you want some extra tang

# Instructions:

01 - Mix together the sugar, pineapple juice, vinegar, and salt in a large, sturdy pan on a stove. Slowly bring it all to a light boil.
02 - Throw in the minced garlic, chili flakes, and ketchup if you're using it. Let it simmer for about 5 minutes over medium heat.
03 - Turn the heat down to low, then carefully stir in the cornstarch mixture a little at a time to avoid lumps.
04 - Keep it on low heat and stir now and then. The sauce will thicken up as it cooks and will set even more once cooled.
05 - Once it has completely cooled, pour it into a sterilized bottle or jar and pop it in the fridge for storage.
