Tasty Spinach and Feta Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 large fresh egg, whisked gently
02 - 4 tbsp premium olive oil (use melted butter as an alternative if you like)
03 - 1/4 cup smooth, tangy Greek yogurt

→ Fresh Herbs & Veggies

04 - 1½ cups tender baby spinach, finely sliced
05 - 1 tablespoon minced fresh dill
06 - 1 tablespoon finely chopped green onions
07 - A sprinkle of salt plus freshly cracked black pepper—adjust to your taste

→ Cheese & Dry Ingredients

08 - 4 ounces of crumbled feta cheese
09 - 1/3 cup shredded mozzarella, fresh if possible
10 - 1 cup of self-rising flour

# Instructions:

01 - Turn your oven to 350°F to heat it up. Grab a baking sheet and cover it with parchment paper so nothing sticks.
02 - Take a big mixing bowl and whisk your egg, olive oil, and creamy yogurt together until perfectly smooth and unified.
03 - Carefully fold in the spinach, dill, chopped scallions, salt, pepper, crumbled feta, and mozzarella. Stir it all until it's evenly mixed.
04 - Add your flour by sifting and stir it into the mix. If the dough looks dry, keep mixing firmly until it comes together. You can even use your hands if you find it easier.
05 - Roll small portions of the dough into balls, press them lightly, and arrange them on your baking sheet. Pop them in the oven until they're beautifully golden and done—this should take 17-20 minutes.

# Notes:

01 - No self-rising flour? Just blend 1 cup of regular flour with 1 tsp baking powder, 1/4 tsp baking soda, and 1/2 tsp salt to make your own.
