Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened. Stir in chopped spinach and cook for 2–3 minutes, until wilted. Remove from heat.

In a mixing bowl, combine sautéed spinach mixture, feta cheese, cream cheese, salt, and pepper. Mix thoroughly until the filling is evenly blended.

On a lightly floured surface, roll out the puff pastry to smooth any creases. Cut pastry into squares, approximately 3x3 inches each.

Spoon about 1 tablespoon of the spinach-feta filling onto the center of each pastry square. Fold over to form triangles or rectangles, pressing edges firmly to seal. Use a fork to crimp the edges if desired.

Brush the tops of the pastry rolls evenly with the beaten egg.

Arrange the pastries on the prepared baking sheet and bake for 20–25 minutes, or until golden brown and puffed.

Remove from oven and allow pastries to cool on the baking sheet for about 10 minutes before serving.
