Mix flour, yeast, sesame seeds, baking soda, salt, and chopped scallions together in a bowl. Slowly pour in the melted butter and milk, mixing until the mixture turns into a soft ball of dough. Knead it gently for a couple of minutes until smooth, then set aside for 15 minutes to relax.

Turn on the oven and preheat it to 375°F (190°C). Slice the dough into two parts, grab a large piece of parchment, and rub a little oil on the rolling pin to keep the dough from getting stuck.

Spread out the parchment paper, and roll out one dough piece until it’s super thin, about the same as a quarter—roughly 2 mm. The thinner you go, the crispier the result. Use a small cutter or a glass to create cracker shapes, removing excess dough as you go.

Place all the little circles onto a baking tray, and poke holes in each one with a fork to stop them puffing up in the oven.

Pop the tray in the oven and bake for 12-15 minutes, until the crackers get that beautiful golden-brown color. Let them cool down completely before you serve or pack them up.
