03 - 2 tablespoons extra virgin olive oil, plus additional for greasing
04 - 1.5 teaspoons kosher salt (Diamond Crystal) or 1 teaspoon if using Morton brand
05 - 0.25 teaspoon sugar (optional)

# Directions:

01 - In a large bowl, whisk together chickpea flour, water, olive oil, salt, and sugar if using until a smooth, thin batter forms.
02 - Cover and let the batter sit at room temperature for at least 1 hour, or up to 9 hours, allowing flavors to develop and the mixture to thicken slightly.
03 - Preheat the waffle iron to a medium-high setting until fully heated.
04 - Lightly brush the waffle iron with olive oil or coat with cooking spray. Pour in a portion of the batter, close the iron, and cook until the waffles are golden brown and crisp. Repeat with remaining batter as needed.
05 - Serve straight away for best texture. If needed, keep waffles warm in an oven at 93°C for up to 15 minutes. For storage, cool the waffles and layer them between parchment or wax paper. Freeze for up to 2 months. Reheat in a toaster oven to restore crispness.
