Pineapple Lassi Twist (Print Version)

01 - 5 slices of fresh pineapple, each about 1/2-inch thick
02 - 1 tbsp coconut oil
03 - 1 tbsp unsalted butter
04 - 1 tbsp brown sugar, lightly packed
05 - 1/4 tsp salt
06 - 1 can (400ml) light coconut milk
07 - 230 grams of plain Greek yogurt
08 - 1/4 tsp ground cardamom, plus a bit more for decoration
09 - A pinch of cinnamon powder

# Instructions:

01 - In a wide frying pan, warm up the butter and coconut oil over medium-high heat. Lay 4 pineapple slices in the pan, sprinkle some salt and brown sugar, and cook till both sides are beautifully caramelized (roughly 5 minutes per side). Move them to a plate and let them cool a bit.
02 - In a blender, toss in the caramelized pineapple, yogurt, coconut milk, cinnamon, and cardamom. Blend everything together until you get a silky smooth texture.
03 - Fill up your glasses with the blended mixture. Sprinkle a touch of cardamom on top. Slice the last pineapple piece in half and pop it onto the edge of each glass for a nice finishing touch.
