01 - 1 cup crushed pineapple, thoroughly drained
02 - 1 1/2 cups sweetened shredded coconut, plus extra for coating
03 - 1/4 cup sweetened condensed milk
04 - 1/4 cup powdered sugar
05 - 1 teaspoon vanilla extract
06 - Pinch of salt

# Directions:

01 - In a medium mixing bowl, thoroughly mix the drained crushed pineapple, 1 1/2 cups sweetened shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and salt. Stir until an even, sticky mixture forms.
02 - Cover the bowl tightly with plastic wrap and refrigerate for 30 minutes to enhance flavor and improve consistency for shaping.
03 - Remove the chilled mixture from the refrigerator. Scoop approximately 1 tablespoon of mixture and roll each portion between your palms into a compact ball. If necessary, lightly grease your hands with coconut oil or butter for easier rolling.
04 - In a small bowl, place additional sweetened shredded coconut. Gently roll each ball in the coconut until uniformly coated. Arrange finished balls on a baking sheet lined with parchment paper.
05 - Transfer the tray to the refrigerator and chill for 30 minutes to allow balls to firm completely before serving.
