Soft Peanut Butter Kiss Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 large egg
02 - 1/2 cup smooth peanut butter
03 - 1/2 cup unsalted butter, softened
04 - 1/2 cup packed light brown sugar
05 - 1/2 cup white sugar, plus a bit more for coating

→ Dry Ingredients

06 - 1/2 teaspoon baking powder
07 - 1 1/2 cups plain flour
08 - 3/4 teaspoon baking soda

→ Topping

09 - 36 unwrapped Hershey's Kisses

# Instructions:

01 - Preheat the oven to 375°F. Just leave your cookie sheets as they are—no greasing needed.
02 - In a large bowl, cream the peanut butter, butter, and both sugars together until fluffy. Stir in the egg until smooth. Slowly add the flour, along with the baking soda and powder, blending into a dough.
03 - Take small scoops of the dough and shape them into 1-inch balls. Roll these in some extra sugar to lightly coat, and arrange them 2 inches apart on your pans.
04 - Pop them in the oven and bake for about 8 to 10 minutes until the edges look slightly browned. Immediately after removing them, press a Hershey's Kiss into the center of each one. Let them cool on racks.

# Notes:

01 - A cookie scoop is super handy for getting them all the same size, which helps them bake evenly.
02 - After baking, allow the cookies to rest on the pan for a minute or two before adding the Kisses.
03 - You can freeze these cookies in a sealed container for up to three months.
