Monster Eyeball Cookie Truffles (Print View)

Fun golden Oreo truffles decorated as monster eyeballs with candy melts, sprinkles, and large candy eyes.

# What You'll Need:

→ Truffle Base

01 - 19.1 ounces golden Oreo cookies
02 - 6 ounces cream cheese, room temperature

→ Decoration

03 - 12 ounces colored candy melts
04 - 1/2 cup matching sprinkles
05 - 24 large candy eyes

# Directions:

01 - Place the golden Oreo cookies in a food processor and pulse until finely crushed.
02 - Add the room-temperature cream cheese to the crumbs and blend until the mixture is uniform and smooth.
03 - Use a 1 1/2 tablespoon cookie scoop to portion the dough. Roll each portion into a smooth ball using your hands.
04 - Transfer the dough balls to a baking sheet lined with parchment paper. Place in the refrigerator to set for 15-30 minutes.
05 - Place the colored candy melts in a microwave-safe bowl and heat for 45 seconds. Stir well, then continue melting in 10-20 second increments, stirring after each, until completely smooth.
06 - Working in batches, dip the chilled balls fully in melted candy, allowing any excess to drip off. Place each on fresh parchment paper. Immediately press a large candy eye onto each and sprinkle the top with matching sprinkles.
07 - Chill the decorated truffles in the refrigerator for at least 30 minutes or until the candy coating is firm.
