Mediterranean Sun Dried Tomato Garlic (Print View)

# What You'll Need:

01 - 1 jar (8 oz) sun-dried tomatoes packed in oil
02 - 1 to 2 garlic cloves, grated
03 - 1 small shallot, finely diced

→ Herbs and Seasonings

04 - 1 teaspoon dried oregano
05 - 1 teaspoon dried thyme
06 - 1 teaspoon smoked paprika or sweet paprika
07 - 1 to 2 teaspoons red chili flakes

→ Final Assembly

08 - 1/2 cup grated parmesan cheese
09 - Fresh basil leaves, for garnish

# Directions:

01 - Drain the oil from the sun-dried tomatoes into a small pot, reserving approximately 1/2 cup of oil. Roughly chop 1/3 cup of the sun-dried tomatoes. Add the chopped tomatoes to the reserved oil and mix to begin infusing the flavors.
02 - Add grated garlic, diced shallot, dried oregano, dried thyme, smoked or sweet paprika, and red chili flakes to the pot with the infused oil and chopped sun-dried tomatoes. Set the pot over low heat and simmer gently for 5 minutes, ensuring the oil is warmed and the aromatics are fragrant.
03 - Transfer the grated parmesan cheese into a shallow serving bowl. Carefully pour the hot flavored oil mixture over the cheese, allowing it to melt slightly. Top generously with fresh basil leaves and serve immediately with your choice of bread for dipping.
