Mediterranean Salmon Dish (Printer-Friendly Version)

# What You'll Need:

→ Salmon

01 - 4 salmon portions, each around 7 ounces
02 - 1 lemon, cut into thin slices
03 - 2 teaspoons garlic powder
04 - 2 teaspoons dried oregano
05 - 2 teaspoons dried basil
06 - 1 teaspoon parsley flakes
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon sea salt
09 - 1/4 teaspoon black pepper

→ Mediterranean Topping

10 - 1/2 cup of kalamata olives
11 - 1/2 cup diced cherry tomatoes
12 - 1/3 cup of crumbled feta cheese
13 - 1 tablespoon finely chopped fresh mint
14 - 1 tablespoon finely chopped fresh parsley
15 - 1 tablespoon of extra virgin olive oil
16 - A pinch of salt and some pepper, adjust as needed

# Method:

01 - Set the oven to heat up to 400°F
02 - Combine all the dry seasonings in a little dish. Dab the salmon dry using paper towels, then sprinkle around a teaspoon of the mixture over each piece
03 - Lightly oil a cast iron pan, lay the salmon down, then arrange the lemon slices around it
04 - Pop it into the oven for 12 to 15 minutes, or until the internal heat reads 145°F
05 - Stir together all the ingredients for the Mediterranean topping in a small bowl
06 - Pour the Mediterranean topping mix over the cooked salmon. Sprinkle the olive and feta mixture on top. If you’d like, serve it up with some couscous salad

# Cook's Tips:

01 - Try cooking it in an air fryer at 400°F for about 8-10 minutes
02 - Leftovers stay good in the fridge for close to 3 days
03 - Pairs wonderfully with a fresh Mediterranean couscous salad
