Warm cooking oil in a pan over medium heat. Toss in chopped garlic and cook till it smells good, roughly 1-2 minutes. Add dry spinach and cook another 3-5 minutes until hot. Add salt to your liking and stir well. Dump it in a bowl and mix in the crumbled feta.

Turn the oven to 400°F (200°C). Coat two baking sheets with oil to stop sticking.

Put a sheet of puff pastry on a floured counter and cut it down the middle. Flatten one half with a rolling pin until it's wide enough for two lengthwise folds. In a small bowl, stir together the whisked egg and milk.

Drop 1/6 of the spinach mix down the middle of your flattened pastry. Fold one edge over the filling and brush some egg mix on the other side. Roll it again to close it up tight.

Brush egg mix on top and scatter sesame seeds over it. Cut into six even pieces. Do the same with all remaining pastry sheets.

Arrange spinach rolls on the oiled baking sheets. Stick them in the hot oven for 20-25 minutes, until they've puffed up and turned a nice golden color.
