Simple Cucumber and Bell Pepper Salad (Print Version)

# Ingredients:

→ Fresh Veggies

01 - 10 small sweet peppers, cut into thin rings
02 - 4 small cucumbers, sliced into thin circles

→ Spices & Flavors

03 - 1 teaspoon of chili crisp—add more or less to match your spice level!
04 - ½ tablespoon of 'Everything But the Bagel' seasoning mix for texture and taste

→ Sesame Ginger Dressing

05 - ¼ cup good-quality extra virgin olive oil
06 - ¼ cup rice vinegar (make sure it’s unseasoned)
07 - 1 ½ tablespoons tamari (or use soy sauce if you prefer)
08 - 1 ½ tablespoons maple syrup to sweeten naturally
09 - 2 teaspoons of sesame oil for bold flavor
10 - 1 clove of garlic, crushed or minced
11 - 1-inch piece of fresh ginger, minced
12 - A dash of fresh black pepper for balance

# Instructions:

01 - Put all the dressing ingredients into a blender. Blend them up till it’s smooth and creamy. Then set it aside for later while you move on to prepping the vegetables.
02 - Grab a mixing bowl. Add in the sliced cucumbers and sweet pepper rings. Drizzle about ¼ cup of your dressing over the top, then sprinkle on the chili crisp and 'Everything But the Bagel' mix. Give everything a few good tosses so it’s evenly coated. Taste test, and tweak the seasoning or dressing as needed to get it just right!
