Cinnamon Apple Cottage Cheese Bites (Print View)

Oat bites filled with cottage cheese, apple, and cinnamon. Great for breakfast or snacks.

01 - 1 cup cottage cheese
02 - 1 cup old-fashioned rolled oats
03 - 1/2 cup unsweetened applesauce or 1 small apple, finely grated
04 - 1 large egg
05 - 1/2 teaspoon ground cinnamon
06 - 1 tablespoon honey or pure maple syrup (optional)
07 - 1/2 teaspoon baking powder
08 - Pinch of salt

# Directions:

01 - Preheat the oven to 350°F (175°C). Lightly grease a mini muffin pan or line with mini muffin liners.
02 - In a large mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup if using, baking powder, and salt. Stir until the mixture is thoroughly blended.
03 - Let the batter stand for 5 minutes to allow the oats to absorb moisture.
04 - Divide the batter evenly among the mini muffin cups, filling each nearly to the top.
05 - Bake for 18 to 20 minutes, or until the bites are set and lightly golden on the surface.
06 - Allow to cool in the pan for several minutes, then transfer bites to a wire rack until fully cooled.
07 - Serve warm or store in an airtight container in the refrigerator for up to 4 days.

01 - Resting the mixture before baking allows the oats to soften and bind the batter.
