Chocolate Butter Bites (Print View)

Peanut butter and yogurt come together in these creamy chocolate-covered treats. They’re a fast, protein-packed indulgence made in half an hour!

# What You'll Need:

→ Filling Mixture

01 - 1 Tablespoon of peanut butter
02 - ½ cup of Greek yogurt (full fat)
03 - ½ tablespoon of maple syrup
04 - ¼ cup of powdered peanut butter (like PB2, PB Fit, or Clean Simple Eats)

→ Chocolate Layer

05 - 1 teaspoon of coconut oil
06 - ½ cup of dark chocolate chips (Lily's brand)
07 - Optional: flaky sea salt for sprinkling on top

# Directions:

01 - Add the Greek yogurt, peanut butter, powdered peanut butter, and maple syrup to a medium-sized mixing bowl. Stir until it turns into a smooth, creamy blend where everything is evenly mixed.
02 - Put parchment paper on a small plate or tray. Scoop out the yogurt mixture using a medium cookie scoop or a tablespoon and drop onto the paper. Shape into small round balls if you'd like. You should end up with about 6.
03 - Pop the tray with your yogurt balls into the freezer. Let them stay there for 10-20 minutes, or until they’ve become solid enough for handling and dipping.
04 - While the bites are chilling, combine coconut oil with chocolate chips in a microwave-safe bowl. Melt them in short 30-second bursts in the microwave, stirring each time, until completely smooth and runny.
05 - Take the frozen yogurt balls out of the freezer. Using a fork, dip each one into the melted chocolate, making sure it's fully coated. Let the extra chocolate drip off and place it back on the parchment paper.
06 - If you like, sprinkle a little flaky sea salt on each coated piece while the chocolate’s still wet. This gives a lovely mix of sweet and salty flavors.
07 - Put the chocolate-covered bites into the fridge until the coating hardens completely. This should take 5-10 minutes. Once set, transfer them to an airtight container and keep them chilled. Eat within 3-4 days.
