Chewy Mochi Squares (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 1/2 cup sticky rice flour
02 - 1/4 cup cocoa powder
03 - 3/4 cup granulated sugar
04 - 1/8 tsp fine salt
05 - 1 tsp baking powder

→ Wet Ingredients

06 - 5 tbsp melted unsalted butter
07 - 1/2 cup bittersweet chocolate
08 - 2 eggs (let them warm to room temperature)
09 - 1 1/2 cup whole milk
10 - 1/2 tsp pure vanilla extract

→ Topping

11 - Chopped chocolate pieces, as needed

# Instructions:

01 - Turn on your oven to 320°F (160°C) and get a baking pan that's 8×8 inches ready by lining it with parchment paper.
02 - Using a double boiler, heat up the butter and dark chocolate until smooth while mixing. Set it aside so it can cool down a bit.
03 - Whisk the eggs with vanilla until smooth in a bowl. Pour in the milk slowly and keep whisking until it’s all combined.
04 - Add the melted chocolate with butter into the wet mix bit by bit. Stir as you go until everything is evenly mixed.
05 - In a different mixing bowl, throw in sugar, cocoa powder, baking powder, sticky rice flour, and salt. Stir until it looks uniform.
06 - Slowly pour the wet ingredients into your bowl of dry ingredients. Keep stirring until there are no lumps left.
07 - Dump the batter into the prepared pan and smooth it out. Sprinkle chocolate chunks wherever you like on top.
08 - Put the pan in your preheated oven and let it cook for about 55 to 60 minutes, or until it’s firm.
09 - Let it cool off in the pan first. Then carefully move the brownies to a wire rack so they can cool fully.
10 - After they’ve cooled down, slice them up into squares and enjoy.
