Ground Beef Taco Rice (Printer-Friendly Version)

# What You'll Need:

→ Main Ingredients

01 - 1 pound of ground beef, lean
02 - 2 finely minced garlic cloves
03 - 1 small onion, diced small
04 - 1 packet (3 tablespoons) taco seasoning
05 - 1 uncooked cup of white rice (long grain)
06 - 8 ounces tomato sauce
07 - 2 cups chicken broth (low in sodium)
08 - 1 cup of shredded cheddar cheese

→ Fresh Toppings

09 - Sliced jalapeños
10 - Crushed tortilla chips
11 - Diced tomatoes
12 - Diced avocados
13 - Fresh cilantro
14 - Sour cream
15 - Shredded lettuce

# Method:

01 - In a large pan, cook the ground beef and break it apart as it cooks.
02 - Toss in the diced onions and cook until soft, making sure the beef is fully browned. Get rid of extra grease if needed. Add the garlic and stir for about a minute until you can smell it.
03 - Evenly mix the taco seasoning into the beef mixture.
04 - Pour in the chicken broth, tomato sauce, and rice, and stir it all together. Let it boil, then lower the heat to medium-low, cover it, and leave to cook for about 20 minutes while stirring here and there. Wait until the rice is done and tender.
05 - Mix in the shredded cheese and stir until fully melted. Serve it hot with any toppings you like from the fresh options.

# Cook's Tips:

01 - Homemade taco seasoning adds great flavor if you have time.
02 - Switching ground turkey for the beef works great for something lighter.
03 - Store leftovers in an airtight container—they’ll last up to 4 days in the fridge or 3 months in the freezer.
04 - For reheating, cover and bake at 375°F for about 15 minutes.
