Turn your oven to 400°F (200°C) to get it nice and hot. Lay down some parchment paper on a baking sheet so the cheese bites don’t stick while baking.

Mix up the Parmesan and mozzarella in a mixing bowl. This blend of gooey and sharp cheese is going to be magic!

Set up three bowls: one with flour, one with the whisked egg, and the last one with breadcrumbs and your seasoning mix. This is the assembly setup for perfect coating.

Grab a tablespoon of your cheese mixture and roll it into a ball. Keep doing this until you’ve got about 12-15 pieces. Coat each one by rolling it in flour, dipping it in egg, and then covering it with the breadcrumb mixture.

Arrange your coated cheese balls on the sheet, making sure there’s some space between them. Spritz them with oil spray or drizzle olive oil lightly for browning.

Put the tray in the oven for 10 to 12 minutes. You’ll want these bites golden crispy on the outside and melty inside, but don’t let them rupture!
