Heat vegetable oil in a large skillet over medium-high heat. Shape beef mixture into twelve 2-inch patties. Sear patties for 3–4 minutes per side until browned and cooked through.

In a small bowl, stir together mayonnaise, ketchup, and yellow mustard until smooth.

Spread sauce on cut sides of the buns. Place cheese, a cooked beef patty, and diced pickles on each bottom bun half. Cover with top buns.
