Carrot Oat Morning Bake (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 cup plain applesauce
02 - 2 eggs
03 - 2.5 tablespoons honey
04 - 1 cup milk
05 - 1.5 teaspoons vanilla extract

→ Dry Ingredients

06 - 2 cups oats (rolled, quick or minute)
07 - ½ cup plain collagen powder
08 - 2 teaspoons baking powder
09 - 2.5 teaspoons cinnamon
10 - ¼ teaspoon salt
11 - 1.5 teaspoons ground ginger
12 - 1 teaspoon nutmeg (if you want)
13 - ⅛ teaspoon allspice (if you want)

→ Mix-ins

14 - ¾ cup grated carrots (roughly 1 big carrot)
15 - ½ cup raisins (if you want)
16 - ½ cup broken walnuts (if you want)
17 - ½ cup plain coconut shreds (if you want)

→ Yogurt Frosting

18 - ½ cup Greek yogurt
19 - 3 tablespoons softened cream cheese
20 - 2 tablespoons honey
21 - ½ teaspoon vanilla extract

# Instructions:

01 - Heat your oven to 350°F (175°C). Coat an 8.5x8.5-inch baking dish with butter or oil.
02 - Grab your baking dish and beat applesauce with eggs until they're mixed well. Pour in honey, milk and vanilla extract, then stir everything until it looks smooth.
03 - Dump in oats, collagen powder, baking powder, cinnamon, salt and ground ginger into your wet stuff. Stir everything up good so it's all mixed together.
04 - Gently stir in your shredded carrots and any raisins, walnuts, or coconut shreds you want to add. Stick it in the oven for 25-30 minutes until it's golden on top and a toothpick comes out clean when you poke it.
05 - While it's cooking, make your frosting by mixing Greek yogurt, cream cheese, honey and vanilla in a small bowl until it looks smooth and creamy.
06 - Let your oatmeal cool a bit before spreading that yogurt frosting on top. Cut it into 6 pieces and dig in.

# Notes:

01 - You can swap collagen powder with protein powder or just more oats if you need to.
02 - You can keep this in your fridge for about 5 days.
