Simple Carrot Ginger Soup (Print Version)

# Ingredients:

01 - 1 tablespoon of olive oil
02 - 2 and 1/2 cups of diced carrots
03 - Half a cup of chopped yellow onion
04 - 1 minced garlic clove
05 - 1 teaspoon of fresh ginger, grated
06 - 1 tablespoon of freshly squeezed orange juice
07 - 1/4 teaspoon of turmeric powder
08 - 1 and 1/2 cups of veggie stock
09 - A pinch of salt, adjust based on taste
10 - 1/4 teaspoon of freshly ground black pepper

# Instructions:

01 - Warm up some olive oil in a medium pot over medium heat. Toss in the carrots and onion, and keep cooking them for about 8 to 10 minutes, until they get soft, stirring pretty often. Add the garlic, mix it in, and take it off the heat.
02 - Once the cooked carrots cool slightly, throw them into a blender with ginger, orange juice, turmeric, veggie broth, salt, and pepper, and mix until it’s all smooth and creamy.
03 - Pour into bowls while piping hot, and top it with a splash of olive oil and a sprinkle of fresh pepper to make it extra nice.

01 - Let the mixture cool a little before blending or the steam might push the lid off.
