Hearty Beef Potatoes Skillet (Print Version)

# Ingredients:

01 - 1 small onion, diced finely
02 - 1 pound ground beef (use chuck, round, or sirloin)
03 - 3-4 garlic cloves, chopped finely
04 - 1 pound of Russet potatoes, peeled and cubed into 1/2-inch pieces

→ Seasonings and Liquids

05 - 1/2 cup beef broth
06 - 1 tablespoon of olive oil
07 - 1/4 teaspoon ground pepper
08 - 1/2 tablespoon Worcestershire sauce
09 - 1 tablespoon of tomato paste
10 - 1 1/2 teaspoons kosher salt

→ For Garnish

11 - 1 tablespoon parsley, freshly chopped (optional)

# Instructions:

01 - Heat a skillet with a splash of oil at medium-high. Toss in the beef, sprinkle on the salt and pepper, spread it out, and let it sit untouched for about 3 minutes to achieve a browned crust.
02 - Break the beef into pieces and cook for a couple more minutes. Next, stir in the onion and let it cook, stirring often, for about 3 minutes. Add the garlic and tomato paste, and cook for another 1-2 minutes.
03 - Pour in the beef broth, mix in the potatoes and Worcestershire sauce. Bring it to a boil, cover the pan, and lower the heat to medium-low.
04 - Simmer gently for 20-25 minutes, stirring now and then, until the potatoes are soft and tender. Taste and adjust the salt if needed.

# Notes:

01 - If you want to, you can discard the extra fat from the beef before moving on.
02 - Once the potatoes soften up, stir gently so they don’t fall apart.
03 - To thicken the sauce, uncover the pan in the last couple of minutes.
