Put the string cheese sticks in the freezer and leave them overnight.

Take each string cheese and cover it with bacon. Begin from one tip and wind the strip all around until fully covered. Stick a toothpick in to hold it together if it's coming loose.

Drop the beef fat into a pan (cast iron works best). Let it get nice and hot.

Drop your bacon-wrapped cheese into the hot fat. Flip them around so all sides of the bacon get nice and crunchy.

Take them out and set them on paper towels to soak up the extra fat. Don't wait to eat them.
