# What You'll Need:

01 - 1 teaspoon ground ginger or 1 tablespoon grated fresh ginger
02 - 1½ cups coleslaw mix with multiple colors
03 - 1 tablespoon plain oil
04 - 1 tablespoon rice vinegar
05 - 1 teaspoon onion powder
06 - 1 pound minced pork
07 - ½ teaspoon black pepper, freshly cracked
08 - 1 tablespoon soy sauce
09 - 2 garlic cloves, finely chopped
10 - 1 tablespoon sesame seeds
11 - 2 green onions, finely sliced thin

→ For Assembly

12 - Cooking spray
13 - 8 spring roll wrappers
14 - Water to seal the edges

# Method:

01 - Warm the oil in a pot over medium-high heat. Stir the sesame seeds until they're lightly golden, then toss in the pork and let it brown. Add vinegar, spices, sauces, fresh ginger, and garlic to the pan, cooking until the juices disappear. Lastly, mix in the coleslaw, cooking just until it's tender.
02 - Tip your wrapper so it’s like a diamond shape. Scoop a few spoonfuls of the pork mixture into the center and spread it in a straight line horizontally.
03 - Dab some water on the wrapper’s edges. Fold in the left and right corners toward the center, lift the bottom corner up, and carefully roll it up tight to push out any air. Seal it shut with a little water.
04 - Lightly coat your air fryer basket with some oil spray. Lay your spring rolls inside, leaving space between. Spray the rolls with a bit more oil. Air fry them at 380°F for 8 minutes, flipping them halfway. Cook until crispy and golden.
05 - Set the rolls aside to cool for about 5-10 minutes before enjoying.
