# What You'll Need:

01 - 1 portion of simple pizza dough (homemade or store-bought)

→ Zesty Lemon Mix

02 - 2 tablespoons good-quality olive oil
03 - 1 tablespoon plain water
04 - 1 tablespoon chopped fresh parsley
05 - 1 small garlic clove, finely grated
06 - 1 teaspoon grated lemon peel
07 - 1 teaspoon squeezed lemon juice
08 - ¼ teaspoon sea salt
09 - ¼ teaspoon ground black pepper

→ Cheese

10 - 150g mozzarella (fresh or ½ to ⅓ cup shredded, firm)

→ Finishing Touches

11 - 1 tablespoon lemon juice
12 - 2 tablespoons parmesan cheese, grated
13 - 1 tablespoon parsley, chopped fresh
14 - Black pepper, freshly ground and to your taste

# Directions:

01 - Use the easy no-knead pizza guide up to step 5. Shape the dough and heat the oven as directed.
02 - If you're using fresh mozzarella in water, slice it into ½-inch pieces. Dab off the extra moisture with a paper towel if it seems too wet.
03 - Lay the dough on some parchment and start pressing from the middle outward until it's roughly 9x13 inches. Transfer it gently onto a pizza peel or the flipped side of a baking sheet.
04 - Combine all the brine ingredients in a jar with a good lid. Shake it well until blended smoothly.
05 - Once the dough is rolled out, press small dimples into it with your fingers. Drizzle the lemon mixture evenly across the dough and fill the dimples. Place mozzarella on top.
06 - Carefully slide the pizza from the peel to the pizza stone in your preheated oven. Let it cook until both the crust and the cheese have a golden hint, about 8-10 minutes if using a convection oven. Keep an eye on it—every oven is unique!
07 - After baking, pour the fresh lemon juice over the pizza. Sprinkle with parmesan and parsley, then grind some extra black pepper or add chili flakes for a kick. Slice it up and enjoy right away.
