Zesty Citrus Blend (Print Version)

# Ingredients:

→ Zesty Base

01 - 60 ml freshly squeezed lemon juice (around 3 big lemons)
02 - 120 ml plain water
03 - 3 whole large lemons
04 - 1 tablespoon fine sea salt

→ Optional Flavors

05 - Choose from bay leaves, lime leaves, curry leaves, rosemary, thyme, chilis, peppercorns, or savory

# Instructions:

01 - Scrub lemons thoroughly to get rid of any wax. Slice off both ends and throw them away.
02 - Slice lemons into 0.6 cm thick rounds (about ¼ inch) and take out the seeds.
03 - Put the lemon slices, lemon juice, water, salt, and any optional flavorings in a small covered pot. Let it simmer over low to medium heat for 10-15 minutes, stirring occasionally. Watch the liquid closely, and if it starts to evaporate, add more water or lemon juice.
04 - Turn off the heat and let everything cool down completely.
05 - If you added herbs, take them out. Move everything into a blender and blend until it’s thick and smooth, like baby food. Adjust the texture by mixing in a teaspoon of water or lemon juice at a time if needed.
06 - Pour the mixture into a sealed container. Keep it refrigerated for up to 14 days, or freeze it if you want to save it longer.
