Scrub lemons thoroughly to get rid of any wax. Slice off both ends and throw them away.

Slice lemons into 0.6 cm thick rounds (about ¼ inch) and take out the seeds.

Put the lemon slices, lemon juice, water, salt, and any optional flavorings in a small covered pot. Let it simmer over low to medium heat for 10-15 minutes, stirring occasionally. Watch the liquid closely, and if it starts to evaporate, add more water or lemon juice.

Turn off the heat and let everything cool down completely.

If you added herbs, take them out. Move everything into a blender and blend until it’s thick and smooth, like baby food. Adjust the texture by mixing in a teaspoon of water or lemon juice at a time if needed.

Pour the mixture into a sealed container. Keep it refrigerated for up to 14 days, or freeze it if you want to save it longer.
