Creamy White Chicken Chili (Print Version)

# Ingredients:

01 - 1 1/4 cups corn (fresh or frozen)
02 - 2 cans cannellini beans (15 oz each)
03 - 2 1/2 cups shredded rotisserie chicken (already cooked)
04 - 2 finely minced garlic cloves
05 - 1 small diced yellow onion

→ Liquid and Cream

06 - 1 tbsp olive oil
07 - 2 cans chicken broth, low-sodium (14.5 oz each)
08 - 1 pack Neufchâtel cheese (8 oz, light cream cheese, cut into chunks)

→ Flavors and Herbs

09 - 2 tbsp chopped fresh cilantro
10 - Salt and freshly ground black pepper to suit your taste
11 - 1 (7 oz) can green chilies, diced
12 - 1/2 tsp coriander powder
13 - 1/2 tsp oregano, dried
14 - 1/4 tsp cayenne pepper
15 - 1 1/2 tsp ground cumin
16 - 1/2 tsp smoked paprika
17 - 1 tbsp lime juice (freshly squeezed)

→ To Garnish

18 - Sliced avocado
19 - Tortilla strips or chips
20 - Grated Monterrey Jack cheese
21 - Extra cilantro, chopped

# Instructions:

01 - Heat olive oil in a large pot over medium-high heat. Toss in the onion and cook for about 4 minutes. Stir in the garlic and cook for another 30 seconds until it smells amazing.
02 - Pour in chicken broth, diced green chilies, and all the spices (cumin, paprika, oregano, coriander, cayenne, salt, and pepper). Let it come to a boil, then reduce the heat and let it gently simmer for 15 minutes.
03 - Drain and rinse your cannellini beans. Scoop out 1 cup of them and blend with 1/4 cup of the warm broth until smooth and creamy—it makes a great base. Keep the rest of the beans whole for later.
04 - Stir in the Neufchâtel cheese, corn, pureed beans, and the whole beans. Let it cook for another 5 to 10 minutes, stirring until everything's creamy and mixed well.
05 - Toss in the shredded chicken, lime juice, and chopped cilantro. Serve it up hot and garnish with Monterrey Jack cheese, avocado, extra cilantro, and tortilla chips if you'd like.

02 - You can skip blending the beans if you don’t have a blender, but the soup will end up less creamy
