13 - 1 tablespoon Worcestershire sauce
14 - 1 large egg
15 - Salt, more or less to taste
16 - 1/2 teaspoon fresh ground black pepper, more or less to taste
17 - 2 tablespoons whiskey
18 - Vegetable oil, for cooking

→ Toppings

19 - 4 hamburger buns
20 - 8 ounces baby bella mushrooms, sliced
21 - 8 to 12 strips crispy bacon

# Directions:

01 - Utilize metal mixing bowls and plastic cutting boards when handling raw meat. Avoid using wood cutting boards for meat preparation to reduce contamination risks.
02 - In a large mixing bowl, combine ground beef, Worcestershire sauce, egg, salt, and black pepper. Mix swiftly and thoroughly. Divide mixture into 4 equal portions for half-pound patties or 6 for one-third-pound patties. Shape into patties and arrange on a parchment-lined metal tray. Lightly season both sides with additional salt and pepper. Cover tightly with plastic wrap and refrigerate for 2 to 4 hours to allow the flavors to develop.
03 - Preheat a saucepan over medium to medium-low heat. Add oil and butter; once butter has melted, introduce sliced onions and sauté until they begin to turn golden brown. Sprinkle flour over the onions and stir to coat evenly. Gradually add whiskey, stirring continuously as the mixture simmers and thickens. Add beef stock slowly while stirring. Stir in Worcestershire sauce and tomato paste until well combined. Season with salt and black pepper, and add the bay leaf. Allow the sauce to simmer gently for several minutes, then remove from heat.
04 - Heat a skillet over medium to medium-low heat. Add a small amount of oil and butter, then add the sliced mushrooms. Season with salt and pepper, and sauté until mushrooms are golden brown. Set aside.
05 - Indent the center of each chilled patty with your fingers. Preheat a frying pan over medium heat and add a small amount of oil. Place patties in the hot pan and cook without disturbing for 5 to 8 minutes per side, depending on preferred doneness. Halfway through cooking, after flipping the patties, pour 2 tablespoons whiskey around the burgers. Remove patties from the pan once done and allow them to rest under a loose tent of foil for 5 minutes.
06 - Place each patty on a hamburger bun. Top with sautéed mushrooms, crispy bacon, and spoon over a generous amount of whiskey sauce. Serve immediately.

# Notes:

01 - Chilling the patties before cooking helps them retain their shape and prevents them from breaking apart during searing.
02 - Adding whiskey to the pan during cooking enhances the depth of flavor in the meat.
