In a large mixing bowl, combine shredded chicken, softened cream cheese, diced sausage, green onions, cheddar cheese, hot sauce, and Cajun seasoning. Stir thoroughly to distribute ingredients evenly.

Position one egg roll wrapper on a clean surface with a corner facing you. Place about 2 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, then tuck in both sides. Roll the wrapper up tightly and seal the edge with beaten egg.

Pour approximately 2 inches of vegetable oil into a deep skillet or fryer and heat to 350°F.

Gently lower egg rolls in batches into the hot oil and fry for 3 to 4 minutes until crisp and golden. Remove with a slotted spoon and transfer to paper towels to drain excess oil.

Serve the egg rolls hot, accompanied by ranch dressing, blue cheese dip, or remoulade sauce as preferred.
