Smash or dice the pears into tiny bits. Throw pears, sugar, water, and vanilla syrup into a small pot over medium heat.

Let the mixture bubble up, then lower heat and cook for 5-8 minutes until the liquid gets golden and pears soften up. Keep stirring so everything cooks the same.

Take off heat and pour through a strainer into a container. Push down with a spoon to get all the juice out of the pear bits.

Toss the leftover pear stuff or blend it up for extra flavor if you want. Let the syrup cool down completely before you use it.

In an 8 oz glass, mix 45ml gin with 2 tablespoons of your pear vanilla syrup and stir well. Pour in ¾ cup soda water, add crushed ice on top, and give it a gentle stir.
