01 - 1/3 cup shredded cheese (use a Tex-Mex blend for bold taste)
02 - 1/2 cup chopped vegetables of your choice (spinach works great here)
03 - 1/4 cup low-fat cottage cheese
04 - 3 large eggs
05 - 1 whole wheat tortilla (large size)

→ Spices

06 - 1/8 tsp cayenne pepper (use more or less depending on how spicy you like it)
07 - 1/4 tsp garlic powder
08 - 1/4 tsp salt
09 - Freshly ground black pepper, as much as you'd like

# Directions:

01 - Set your oven to 350°F and adjust the rack to the middle. This ensures everything bakes evenly.
02 - Place the tortilla into an 8-inch cake pan and press it gently so it molds to the pan. This'll be your crunchy crust.
03 - Combine eggs, cottage cheese, and the spices in a small blender. Blend until it's super smooth (10 to 15 seconds does the trick). No blender? Use a whisk and mix really thoroughly.
04 - Pour the blended egg mix straight into your tortilla. Add the chopped vegetables and cheese on top, spreading them evenly.
05 - Bake it for 20 to 25 minutes, until the eggs are fully firm and the tortilla edges turn crispy and golden.
06 - Wait 5 minutes before removing the quiche from the pan. Slice it into four pieces. It's great warm or saved for later as a tasty lunch!
