Savory Tomato Toast (Print Version)

# Ingredients:

01 - Turn two garlic confit cloves into a smooth paste
02 - Half a cup of quality mayo
03 - Juice and zest from a fresh lemon (use half for this recipe)
04 - Four thick rustic bread slices (cut about 1/2 to 3/4 inch thick)

→ Toppings

05 - Use three medium or 4-5 small heirloom tomatoes, sliced into rounds
06 - Chop two tablespoons of fresh chives
07 - Two teaspoons of sesame seeds
08 - Flaky Maldon sea salt to sprinkle on top
09 - A bit of freshly ground black pepper for seasoning
10 - Aleppo pepper flakes if you like a bit of spice
11 - A drizzle of high-quality extra virgin olive oil

# Instructions:

01 - Mix the garlic confit paste with the mayo in a small bowl. Then squeeze in juice from half a lemon. Season it with kosher salt and freshly ground black pepper, adjusting until it tastes just how you like it.
02 - Spread the garlic-lemon mayo generously over each slice of your toasted bread. Add an overlapping layer of sliced heirloom tomatoes. Cut the tomatoes in half if they're too large to fit nicely.
03 - Scatter the chives, sesame seeds, and a pinch of flaky sea salt over the top of each toast. Throw on some freshly ground black pepper and Aleppo pepper if you're into heat. Grate a little bit of lemon zest right over everything and finish with a drizzle of olive oil.
