Tomato Shrimp Pasta (Print Version)

# Ingredients:

01 - 8 ounces uncooked fettuccine noodles
02 - 3 cloves garlic
03 - ½ sweet onion, sliced into wedges
04 - 3 tablespoons fresh oregano leaves
05 - 4 tablespoons olive oil
06 - 4 medium tomatoes, diced
07 - 3 tablespoons fresh basil, chopped
08 - salt and pepper to taste
09 - 1 cup spinach leaves
10 - 1 pound shrimp, cooked, peeled and deveined
11 - 8 ounces fresh mozzarella cheese, cubed

# Instructions:

01 - Fill a big pot with lightly salted water and bring to a boil. Toss in pasta and let it cook till soft, roughly 8 minutes. Drain water when done.
02 - Put oregano, onion, and garlic in your food processor and give it a few pulses till it's finely chopped. Warm up olive oil in a big skillet over medium heat. Toss in your chopped mixture and stir until it smells good and turns nearly golden.
03 - Add your diced tomatoes, basil, salt, and pepper to the pan. Let everything bubble gently for about 5 minutes, giving it a stir now and then.
04 - Throw in the spinach and stir until it shrinks down. Add your shrimp and keep cooking until everything's hot.
05 - Grab a big serving bowl and mix the seafood mixture with your cooked pasta. Stir in the cubed mozzarella cheese.
