Combine the water, brown sugar, yeast, and melted butter in your stand mixer bowl with the dough hook attached. Let it sit for about 5 minutes to activate.

Add your salt and flour to the yeast mixture. Mix at medium speed until you've got a smooth, elastic ball - this takes around 3-4 minutes. If it's too sticky, sprinkle in a tablespoon of flour at a time until it comes together.

Put your dough in a big bowl with a light oil coating. Flip the dough around to get oil on all sides. Cover with plastic wrap and leave it somewhere warm until it doubles in size, usually about an hour.

Dump the dough onto a lightly floured counter. Split it into 8 equal parts. Roll each part into a long 21 inch rope. Then cut these ropes into small 3-inch sections to make your bites.

Take each bite and flatten it with your rolling pin. Drop some pepperoni and cheese in the middle. Fold the dough over and squeeze the edges closed. Put them on a baking sheet and keep going until all bites are filled.

Heat your oven to 425 degrees F. Get a large pot of water boiling, then add the baking soda and turn down the heat to a gentle simmer.

Gently drop your pretzel bites into the simmering water in small batches for about 30 seconds each. Scoop them out with a big slotted spoon and place them on a baking sheet lined with parchment, keeping them about 2 inches apart.

Brush each bite with beaten egg mixture and sprinkle plenty of salt on top. Bake them for 15 to 18 minutes until they turn a nice golden brown color.

Eat them while they're still warm with some pizza sauce on the side for dipping.
