Warm a big nonstick pan on medium-low. Spray it lightly with oil.

Whisk the eggs in a bowl, sprinkle in some salt and pepper. Pour the eggs carefully into the pan. Place one slice of bread into the eggs, flip it over to coat. Do the same with the second slice.

When the eggs are almost done setting (after about a minute), flip everything over with a spatula—both bread slices and the egg.

Add some cheese and meat onto one slice of the bread. Fold the extra egg around the bread to keep everything neat.

Take the bread without toppings and flip it onto the topped piece. Brown the outside of the sandwich until the cheese melts and the bread looks golden.
