Sausage Sweet Potato Dish (Print Version)

# Ingredients:

→ Sausage and Sweet Potatoes

01 - 14 oz turkey or chicken sausage, sliced into 1/2-in rounds
02 - 2 medium sweet potatoes, diced into 1/2-in chunks
03 - 2 cups broccoli, broken into 1/2-in florets
04 - 1 tablespoon unsalted butter
05 - 4 medium cloves garlic, finely chopped
06 - 1/4 cup honey
07 - 1/4 cup low-sodium soy sauce
08 - 1 tablespoon apple cider vinegar
09 - Salt and pepper to taste
10 - 2 tablespoons fresh parsley, finely chopped

# Instructions:

01 - Heat your oven to 400°F (200°C). Lightly oil a big sheet pan and spread out the sausage, sweet potatoes, and broccoli.
02 - Melt butter in a medium skillet over medium-heat. Cook garlic for 1 minute till it smells good. Add honey, soy sauce, and vinegar, then let it bubble. Turn heat down to medium-low and cook for 3-5 minutes until it gets a bit thick, giving it a stir now and then.
03 - Pour your honey garlic mix all over the sausage and veggies. Add salt and pepper how you like it. Mix it all up so everything's coated nicely and lay it flat on the pan.
04 - Cook the sausage and veggie mix at 400°F (200°C) for 25-30 minutes until the veggies are soft. Sprinkle fresh parsley on top before you serve it.
