Potato Pea Greek Bowl (Print View)

A classic Mediterranean bowl mixing peas, spuds and herbs that works as your main meal or paired with something else.

01 - 1/4 cup olive oil
02 - 1 onion, cut into small pieces
03 - 2-3 garlic cloves, grated finely
04 - 2-3 carrots, chopped into cubes
05 - 1 pound frozen green peas
06 - 2 potatoes, cubed
07 - 15 ounces tomato puree
08 - 1 cup water
09 - salt as needed
10 - pepper as needed
11 - tiny bit of crushed red pepper flakes
12 - 2 tablespoons fresh dill, finely chopped
13 - 1 teaspoon dried mint

# Directions:

01 - Pour olive oil in a pot with onion and cook on medium heat until golden and soft.
02 - Toss in potatoes, carrots, tomato puree, water, salt, and peppers. Let it come to a boil.
03 - Turn heat down to medium and stir in the peas. Let everything cook for 25-30 minutes.
04 - Try a spoonful and add more seasonings if you want.
05 - Mix in dill and mint until well combined.
06 - Let everything sit for about 45 minutes so flavors can blend together. The potatoes will soak up sauce and make the dish thicker.

# Notes:

01 - Pour in extra water at the start if you like your sauce on the runnier side.
02 - Want a stronger tomato flavor? Drop in 1 teaspoon tomato paste early or use more tomato puree.
03 - For a zesty twist, cook 3-4 scallions with the softened onions until they're tender. Finish with lemon juice and parsley along with the other herbs.
