Set your oven to 400°F with the rack in the upper third. Warm oil in a big skillet over medium-high heat. Toss in onion and garlic and stir often until they're clear, around 4 minutes.

Throw in your ground beef, chili powder, cumin, oregano, and paprika. Keep stirring until the beef turns brown, about 6 minutes. Mix in your salsa, taco sauce, and stock. Cook while stirring until it gets a bit thick, about 3 minutes. Add beans and cilantro.

Spray a 13- x 9-inch, 3-quart baking dish lightly with cooking spray. Put down 2 cups of chips on the bottom. Cover with half the beef mix (about 3 cups). Add another layer of chips, then sprinkle 1 1/2 cups cheese. Finish with the rest of the beef, remaining chips, and the last of your cheese.

Cover with foil and pop in your hot oven until you see bubbles forming at the edges, about 15 to 20 minutes.

Take the foil off and let it bake until it's golden and bubbly, for about 5 more minutes. Top with fresh cilantro before serving.
