Beef Nacho Bake (Print Version)

# Ingredients:

01 - 1 Tbsp. vegetable oil
02 - 1 cup diced white onion (from 1 medium [8 oz.] onion)
03 - 2 big garlic cloves, finely chopped (about 1 Tbsp.)
04 - 1 lb. lean ground beef
05 - 1 tsp. chili powder
06 - 1 tsp. ground cumin
07 - 1/2 tsp. dried oregano
08 - 1/2 tsp. paprika
09 - 1 1/2 cup chunky red salsa (from 1 [16-oz.] jar)
10 - 3/4 cup taco sauce (from 1 [8-oz.] jar)
11 - 1 cup beef stock
12 - 1 (15-oz.) can black beans, rinsed and drained
13 - 1/4 cup fresh chopped cilantro, plus extra for topping

→ Assembly

14 - Cooking spray
15 - 6 cups roughly broken tortilla chips (from 1 [13-oz.] bag)
16 - 2 (6-oz.) bags shredded Mexican cheese blend (about 3 cups)

# Instructions:

01 - Set your oven to 400°F with the rack in the upper third. Warm oil in a big skillet over medium-high heat. Toss in onion and garlic and stir often until they're clear, around 4 minutes.
02 - Throw in your ground beef, chili powder, cumin, oregano, and paprika. Keep stirring until the beef turns brown, about 6 minutes. Mix in your salsa, taco sauce, and stock. Cook while stirring until it gets a bit thick, about 3 minutes. Add beans and cilantro.
03 - Spray a 13- x 9-inch, 3-quart baking dish lightly with cooking spray. Put down 2 cups of chips on the bottom. Cover with half the beef mix (about 3 cups). Add another layer of chips, then sprinkle 1 1/2 cups cheese. Finish with the rest of the beef, remaining chips, and the last of your cheese.
04 - Cover with foil and pop in your hot oven until you see bubbles forming at the edges, about 15 to 20 minutes.
05 - Take the foil off and let it bake until it's golden and bubbly, for about 5 more minutes. Top with fresh cilantro before serving.
