Sweet Potato Topping (Print Version)

# Ingredients:

01 - ⅔ cup heavy whipping cream
02 - 2 teaspoons pure vanilla extract
03 - ½ teaspoon table salt
04 - 2 teaspoons pumpkin spice seasoning
05 - 3 eggs, large
06 - 1 cup white sugar
07 - 2 cups of sweet potatoes, mashed

08 - 1 ½ cups white sugar
09 - 12 tablespoons of unsalted melted butter
10 - ½ teaspoon salt
11 - 2 cups regular flour
12 - 2 teaspoons ground cinnamon

→ Topping (Optional)

13 - Ice cream - vanilla flavor

# Instructions:

01 - Heat your oven up to 375°F (190°C). Grease up a 12-inch cast iron pan or a medium-sized casserole dish. Once done, put it aside.
02 - Take a big mixing bowl and put in mashed sweet potatoes, sugar, pumpkin pie spice, eggs, salt, and vanilla. Mix it well until it's smooth, then slowly stir in the heavy cream. Pour this into your prepped skillet.
03 - Grab a medium bowl and mix together salt, flour, sugar, and cinnamon. Melt the butter, pour it in, then use a fork to mix it to a crumbly texture. Want it finer? A hand mixer will do the trick.
04 - Evenly sprinkle the cinnamon streusel over the sweet potato mix. Pop it in the oven to bake for about 40-45 minutes until the topping is golden and the filling has set.
05 - Let it rest for about 10 minutes before serving. Top it off with a dollop of vanilla ice cream for extra yumminess, if you'd like.
