Sweet Mango Tomato Mix (Print Version)

# Ingredients:

01 - 3 cups chopped ripe yellow mango
02 - 3 cups chopped vine tomatoes with seeds removed
03 - 1 cup chopped white onion
04 - 1/4 cup fresh lime juice (roughly 2 limes)
05 - 3 tablespoons finely chopped jalapeno (about 1 whole pepper)
06 - 1 cup tightly packed cilantro leaves (1 small bunch)
07 - 1 teaspoon coarse sea salt

# Instructions:

01 - Toss all items together in a large bowl until well combined. Give it a taste and add more salt if needed.
02 - Pop it in the fridge for at least an hour, though 4 hours works better to blend the flavors. You can even make it the day before and keep it cold overnight.

# Notes:

02 - To get seeds out of tomatoes, slice them in half and scoop the seeds with your fingertip or a teaspoon before chopping.
03 - This will stay good in your fridge for 3-4 days, but it's tastiest when eaten within the first 2 days.
