Heat a skillet over medium heat and add 1 1/2 tablespoons cooking oil. Fry the eggs one at a time until both sides are golden and crispy. Remove from the skillet and set aside.

Wipe the skillet with paper towels. Pour in the remaining 1/2 tablespoon oil and sauté the minced garlic until light brown. Add Thai sweet chili sauce, water, and lime juice. Stir well to combine.

Return the fried eggs to the skillet. Reduce heat to low and cook until the sauce slightly thickens. Season with salt as needed.

Arrange eggs on a serving plate and garnish with chopped cilantro. Serve immediately.
