Chai Vanilla Muffins (Print Version)

# Ingredients:

→ Muffin Mix

01 - 1 big egg
02 - 1/2 cup milk
03 - 1/4 cup vegetable oil
04 - 1 1/2 cups plain flour
05 - 1/2 cup white sugar
06 - 2 teaspoons baking powder
07 - 2 teaspoons Vanilla Chai Spice mix
08 - 1/2 teaspoon salt

→ Finish

09 - Chunky sugar crystals (if wanted)

# Instructions:

01 - Heat your oven to 400°F (200°C). Coat a 6-cup muffin tin with non-stick spray and put it aside.
02 - Grab a big bowl and beat the egg, milk, and oil together until smooth.
03 - Dump in the flour, sugar, salt, baking powder, and vanilla chai spice with your wet mix. Stir gently until mixed. Don't beat it too much.
04 - Grab a big cookie scoop and drop batter evenly into all 6 muffin cups. Sprinkle sugar on top if you want.
05 - Stick them in your hot oven for about 18-20 minutes until they turn golden on top and feel firm.
06 - Take them out and let them sit in the pan for 10 minutes. Then move your muffins to a wire rack until they're totally cool.

# Notes:

01 - You can buy Vanilla Chai Spice ready-made or mix your own using cinnamon, cardamom, ginger, cloves and some vanilla powder.
