Heat your oven to 400°F (200°C). Coat a 6-cup muffin tin with non-stick spray and put it aside.

Grab a big bowl and beat the egg, milk, and oil together until smooth.

Dump in the flour, sugar, salt, baking powder, and vanilla chai spice with your wet mix. Stir gently until mixed. Don't beat it too much.

Grab a big cookie scoop and drop batter evenly into all 6 muffin cups. Sprinkle sugar on top if you want.

Stick them in your hot oven for about 18-20 minutes until they turn golden on top and feel firm.

Take them out and let them sit in the pan for 10 minutes. Then move your muffins to a wire rack until they're totally cool.
