Set your oven to 325°F (163°C). Grease a baking dish lightly to prevent sticking.

Sprinkle salt and pepper over the chicken cubes. Dip each chicken piece into cornstarch, then dunk it into the beaten eggs to get a good coating.

Use a skillet and heat the oil on medium-high heat. Fry the chicken pieces in small batches until they’re golden on the outside (about 2-3 minutes each side). They don’t need to be fully cooked yet.

In a medium-sized bowl, combine the sugar, white vinegar, ketchup, garlic powder, onion powder, and soy sauce. Whisk it all together until smooth.

Place the fried chicken in the baking dish you prepped earlier. Pour the sauce over the chicken, making sure it’s all covered. Put it in the oven for an hour, stirring every 15 minutes. This helps thicken the sauce and coat the chicken evenly.
