01 - 100g feta cheese, crumbled
02 - 2 eggs
03 - ½ cup chopped fresh spinach
04 - 1 medium sweet potato, shredded finely
05 - 4 tablespoons chickpea flour (also known as gram flour)
06 - Black pepper and a pinch of salt, adjust to your liking

07 - A sprinkle of chili flakes (about ¼ teaspoon)
08 - 1 teaspoon of garlic powder
09 - A hint of smoked paprika, about ½ teaspoon

# Directions:

01 - Turn your oven on to 180°C (350°F), but lower it to 160°C (320°F) if you're using a fan setting. Put parchment paper on a baking tray to stop sticking.
02 - Use a grater with big holes to shred the sweet potato—don't peel unless dirty. Chop the spinach finely. In a bowl, whisk those eggs until smooth.
03 - Take the grated sweet potato, feta, spinach, and flour, then toss it all into your whisked eggs. Throw in salt, pepper, and optional spices you love. Stir it all well so it's blended.
04 - Grab the mixture and press it down onto your parchment-lined tray. Form it into a rectangle—or leave some rough edges, your choice. Bake it for 20-25 minutes until it's golden and firm when touched.
