Spinach Ricotta Bites Appetizer (Print View)

Fresh spinach, ricotta, and cheese wrapped in flaky pastry, baked for a crisp, satisfying appetizer.

# What You'll Need:

01 - 2 cups fresh spinach, sautéed until wilted
02 - 1 cup ricotta cheese
03 - 1/2 cup grated Parmesan cheese
04 - 2 cloves garlic, minced

→ Bites

05 - 1 large egg, whisked
06 - 1 sheet puff pastry, thawed
07 - Salt, to taste
08 - Black pepper, to taste
09 - 1 tablespoon olive oil, for brushing

# Directions:

01 - Preheat oven to 400°F (200°C).
02 - Warm a skillet over medium heat. Sauté fresh spinach until wilted, about 2–3 minutes. Remove from heat and let cool slightly.
03 - In a mixing bowl, combine ricotta cheese, grated Parmesan, minced garlic, and cooled sautéed spinach. Stir until evenly blended.
04 - Lightly whisk the egg in a small bowl.
05 - Place the puff pastry sheet on a lightly floured work surface. Use a rolling pin to roll to even thickness and cut into approximately 3 x 3 inch squares.
06 - Place a spoonful of spinach-ricotta mixture in the center of each pastry square. Fold the pastry over the filling and firmly press edges to seal.
07 - Arrange sealed pastry bites onto a baking sheet. Brush the tops with olive oil for enhanced browning.
08 - Bake in preheated oven for 15–20 minutes, or until bites are puffed and golden brown. Remove and serve warm.
