Preheat oven to 400°F (200°C).

Warm a skillet over medium heat. Sauté fresh spinach until wilted, about 2–3 minutes. Remove from heat and let cool slightly.

In a mixing bowl, combine ricotta cheese, grated Parmesan, minced garlic, and cooled sautéed spinach. Stir until evenly blended.

Lightly whisk the egg in a small bowl.

Place the puff pastry sheet on a lightly floured work surface. Use a rolling pin to roll to even thickness and cut into approximately 3 x 3 inch squares.

Place a spoonful of spinach-ricotta mixture in the center of each pastry square. Fold the pastry over the filling and firmly press edges to seal.

Arrange sealed pastry bites onto a baking sheet. Brush the tops with olive oil for enhanced browning.

Bake in preheated oven for 15–20 minutes, or until bites are puffed and golden brown. Remove and serve warm.
