Spinach Feta Egg Cups (Print Version)

# Ingredients:

01 - 6 big eggs
02 - 1 cup chopped fresh spinach (or ½ cup thawed frozen spinach, squeezed dry)
03 - ½ cup broken up feta cheese
04 - ¼ cup milk (skip it or use it for extra fluffy results)
05 - ¼ teaspoon salt (add more if you want)
06 - ⅛ teaspoon ground pepper

→ Extra stuff to mix in

07 - ¼ cup chopped bell peppers
08 - ¼ cup chopped small tomatoes
09 - 2 tablespoons minced onions
10 - ¼ cup pre-cooked bacon bits or sausage chunks

# Instructions:

01 - Turn your oven on to 350°F (175°C). Oil your muffin pan or pop in some silicone cups to make cleanup super easy.
02 - Cut the spinach into tiny bits and break apart the feta if it comes in bigger chunks.
03 - Grab a big bowl and beat those eggs well. Pour in milk if you're using it, then throw in salt and pepper.
04 - Toss your spinach, feta, and any extras you want into the egg mix and stir it all together.
05 - Spoon your mixture into each muffin spot, filling them about ¾ of the way up.
06 - Stick the pan in the oven for 20-25 minutes until they're firm and a bit golden on top.
07 - Let them sit for a few minutes before taking them out of the pan.
