Turn your oven on to 350°F (175°C). Oil your muffin pan or pop in some silicone cups to make cleanup super easy.

Cut the spinach into tiny bits and break apart the feta if it comes in bigger chunks.

Grab a big bowl and beat those eggs well. Pour in milk if you're using it, then throw in salt and pepper.

Toss your spinach, feta, and any extras you want into the egg mix and stir it all together.

Spoon your mixture into each muffin spot, filling them about ¾ of the way up.

Stick the pan in the oven for 20-25 minutes until they're firm and a bit golden on top.

Let them sit for a few minutes before taking them out of the pan.
