Heat your oven to 375°F (190°C). Cover a big baking tray with parchment paper.

Use a mini food processor to blend the cottage cheese until it's creamy and smooth.

Mix together the creamy cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella cheese in a large mixing bowl. Stir until everything's mixed well.

Roll the dough into a 6-inch log with your hands. Split it into six equal parts. Flatten each piece into a disc and poke a hole in the middle with your finger to get that bagel look.

Put the shaped dough pieces on the lined tray. Brush the tops with the egg wash. Bake for 22-25 minutes or until golden. Once baked, place them on a cooling rack to cool down completely.
