Spinach Cheese Flat Bagels (Print View)

Golden baked flagels loaded with cottage cheese and spinach—no need to boil them. A cheesy bite that's quick and satisfying!

# What You'll Need:

01 - 1 tablespoon olive oil
02 - 1/2 teaspoon salt
03 - 3 teaspoons baking powder
04 - 1 cup + 2 tablespoons plain flour
05 - 1 ounce shredded mozzarella cheese
06 - 2 ounces finely chopped baby spinach
07 - 1 cup smooth cottage cheese

→ Egg Wash

08 - 1 lightly beaten egg

# Directions:

01 - Heat your oven to 375°F (190°C). Cover a big baking tray with parchment paper.
02 - Use a mini food processor to blend the cottage cheese until it's creamy and smooth.
03 - Mix together the creamy cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella cheese in a large mixing bowl. Stir until everything's mixed well.
04 - Roll the dough into a 6-inch log with your hands. Split it into six equal parts. Flatten each piece into a disc and poke a hole in the middle with your finger to get that bagel look.
05 - Put the shaped dough pieces on the lined tray. Brush the tops with the egg wash. Bake for 22-25 minutes or until golden. Once baked, place them on a cooling rack to cool down completely.

# Notes:

01 - These flat bagels, or flagels, pack extra protein from cottage cheese. There's no need to proof or boil them, making them super easy to whip up.
