Morning Chili Topped Eggs (Print Version)

# Ingredients:

→ Proteins

01 - 4 strips center cut bacon
02 - 1 pound uncooked turkey breakfast sausage

→ Vegetables

03 - 1 white onion, chopped small
04 - 1 poblano or bell pepper, chopped small
05 - 2 cloves garlic, crushed or shredded

→ Pantry Items

06 - 1 packet chili seasoning
07 - 1 can (28 oz) fire roasted crushed tomatoes
08 - 3-4 cups beef broth

# Instructions:

01 - Put bacon in a Dutch oven or soup pot with medium heat. Cook fully till crispy, then move it to a paper towel to soak up grease.
02 - Toss chopped onion and pepper into the leftover bacon fat. Let them cook about 2-3 minutes till soft, then throw in garlic and cook another 30-60 seconds till you can smell it.
03 - Drop turkey sausage into the pot, breaking it up as you go. Cook it completely till you don't see any pink parts.
04 - Dump in chili seasoning, crushed tomatoes and beef broth. Break up the cooked bacon and toss it back in. Let it bubble up, then turn heat down low. Cover and let it simmer 45-60 minutes till everything tastes good together and it's as thick as you want.

# Notes:

01 - Try adding a fried egg on top for a filling breakfast.
02 - Pour in more or less beef broth to make it runnier or thicker based on what you like.
