01 - 1 cup long-grain jasmine rice
02 - 2 cups chicken broth

03 - 1 pound Cajun sausage, diced
04 - 2 tablespoons Cajun seasoning

05 - 1 cup mixed bell peppers, chopped (red, yellow, and green)
06 - 1 medium yellow onion, chopped

# Directions:

01 - Rinse long-grain jasmine rice thoroughly under cold running water to remove excess starch.
02 - In a large skillet over medium heat, sauté chopped onions, bell peppers, and minced garlic in a splash of oil until vegetables are softened, about 5 to 7 minutes.
03 - Add diced Cajun sausage to the skillet and cook, stirring occasionally, until browned, about 3 to 5 minutes.
04 - Stir in rinsed rice, Cajun seasoning, and tomato paste with the sausage and vegetables until all ingredients are well coated.
